Easy Chocolate Chip Cookies:
Ingredients: 1/2 cup butter, 1/2 cup granulated sugar, 1/4 cup brown sugar packed, 2 teaspoons, vanilla extract, 1 large egg, 1 ¾ cups all-purpose flour properly measured, 1/2 teaspoon baking soda, 1/2 teaspoon kosher salt, 1 cup semisweet chocolate chips
Step 1: Preheat the oven to 350 F.
Step 2: Microwave the butter for about 40 seconds. Butter should be completely melted but shouldn’t be hot.
Step 3: In a large bowl, mix butter with the sugars until well-combined.
Step 4: Stir in vanilla and egg until incorporated.
Step 5: Add the flour, baking soda, and salt. Mix dough until just combined. Dough should be soft and a little sticky but not overly sticky.
Step 6: Stir in chocolate chips.
Step 7: Scoop out 1.5 tablespoons of dough (medium cookie scoop) and place 2 inches apart on the baking sheet.
Step 8: Bake for 7-10 minutes, or until cookies are set. They will be puffy and still look a little undercooked in the middle.
Easy Peanut Butter Cookies:
Ingredients: Creamy peanut butter, unsalted butter, brown sugar, 1 large egg, vanilla extract, baking soda, salt, all-purpose flour, and granulated sugar
Step 1: Preheat the oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
Step 2: In a large microwave-safe bowl, melt the butter and a 1/2 cup of peanut butter together (this takes about 45 seconds to 1 minute in a standard microwave). Stir until there is one homogenous melted butter-peanut butter mixture, then whisk in brown sugar.
Step 3: Whisk in egg and vanilla until the mixture is well combined. Add the salt and baking soda to the wet ingredients, and whisk until fully incorporated.
Step 4: Add the flour and stir with a fork or rubber spatula until a fairly stiff dough is formed. It may be needed to put in some elbow grease with the spatula or hands in order to get it to come together, but trust, it will.
Step 5: Scoop dough using a tablespoon cookie scoop, then roll it between your palms to create a smooth dough ball.
Step 6: Place on the cookie sheet then press down gently using the tines of a fork to form a crisscross pattern.
Step 7: Repeat with remaining cookie dough balls, spacing 2 inches apart on the cookie sheets. Step 8: Sprinkle granulated sugar over the cookies before baking if desired.
Step 9: Bake for 10 minutes, until the cookies are slightly puffed, golden brown and smelling amazing. And finally, let the cookies cool on a wire rack. Enjoy!
